Abs­trak: Jenang ada­lah penga­na­nbe­rin­deks gli­ke­mik ting­gi, kare­na ber­kan­dung­an ami­lo­pek­tin yang ting­gi. Kap­pa­phycus alva­re­ziimeru­pak­an rum­put laut yang dapat diman­fa­atk­an seba­gai bah­an pen­subs­ti­tu­si tepung ket­an pada pem­bu­at­an jenang, kare­na ber­kan­dung­an ami­lo­pek­tin ren­dah ser­ta­ber­kan­dung­an serat pangan larut air ting­gi. Tuju­an pene­li­ti­an ini ada­lah meng­e­ta­hui penga­ruh subs­ti­tu­si K. alva­re­ziiter­ha­dap nilai indeks gli­ke­mik dan mutu jenang K. alva­re­zii. Subs­ti­tu­si K. alva­re­ziimem­pe­nga­ru­hi nilai indeks gli­ke­mik, kadar air, abu, kar­bo­hi­drat, serat pangan,aroma, war­na, teks­tur dan rasa. Jenang ter­subs­ti­tu­si K. alva­re­zii dapat dikem­bangk­an men­ja­di pangan fung­sio­nal anti­hi­per­gli­ke­mik.

Abs­tra­ct: Jenang is a food that con­ta­in high glyce­mic index cau­sed it con­ta­in more amylo­pe­ctin. Kap­pa­phycu­sa­lva­re­zii is a sea­we­ed that can be used as subs­ti­tu­tion agent of glu­ti­no­us rice flo­u­ron jenang pro­du­ction. The pur­po­se of this stu­dy was to inves­ti­ga­te the effe­ct of K. alva­re­zii subs­ti­tu­tion on glyce­mic index and qua­li­ty of jenang. The subs­ti­tu­tion of K. alva­re­ziiaffe­cted on the glyce­mic index, water, ash, car­bo­hydra­te, die­tary fiber,aroma, color, textu­re and tas­te­of jenang, res­pe­cti­ve­ly. Jenang subs­ti­tu­ted K. alva­re­zii can be pro­du­ced to fun­ctio­nal food of anti-hyper­glyce­mic.
